Tarbooz or water-melon is a common fruit of summers and is relished by most of us in its raw form, with salt.. Cooking a sabzi out of it is quite unconventional. I tried it because of the motivation from my mother. She has cooked it sometimes, though in a different manner. Believe me, it was delicious and worth a trial once!

Serves: 2
Ingredients:

  1. Peels of water melon
  2. Two tomatoes
  3. Some chillies, ginger, cumin seeds
  4. A small cup of water

Preparation Time: 10 – 15 min
How to Cook:

  1. Chop the watermelon peel-offs. If you want to cook this bhujia, there is a direction to follow while cutting watermelon, remove the meat of watermelon fruit in such a manner that some of the red part of the fruit keeps sticking to the peel. Another thing to note is the selection of the peels that would go into cooking.. The watermelon peels that are dark green and have no visible marks are best to cook as well as look!
  2. Now chop tomatoes, green chillies and ginger..
  3. Put a pan on the gas and drop two spoons of oil in it.
  4. Add cumin seeds, haldi, red chilli powder, chopped tomatoes, green chillies and ginger. Cook for some time.
  5. Add chopped watermelon, water and salt to taste. Cover with a lid..
  6. Remove the lid after 5 min, if the watermelon peels have been cooked they would have become tender.. Check if the water has evaporated and peels are cooked. Else add some more water and cook for some more time.
  7. Serve hot with coriander garnishing along with rotis or parathas!

It tastes best if the peel of the water-melon is green and thin..
