Dhokla is a very popular gujrati snack. It has featured as a bomb in a very popular bollywood film, Three Idiots… (If you recall) This snack is loved a lot among Indians and foreigners alike! It is cooked in various varieties, the most common one being khaman dhokla. Its taste is a perfect blend of khatta and meetha! It is prepared out of the fermented batter of besan or chickpea.. The recipe shared below is of the khaman dhokla. Nowadays a lot of readymade mixtures of the besan are available that don’t require to be kept overnight for fermentation. These are good to be used instantaneously.. Otherwise one needs besan, baking soda, salt and sugar to taste..

Servings: 5 – 6
Ingredients:

    For Dhokla:

  1. 1/3 of the Khaman Besan Mixture
  2. Just sufficient Water to prepare batter
  3. For Tadka:

  4. Glassful of Water
  5. 2 tbsp of oil
  6. Some curry leaves
  7. 1 tbsp rye
  8. 1 lemon
  9. Salt and sugar according to taste

Procedure:

      For Dhokla:
  1. In a bowl, put the besan mixture and slowly add water.
  2. Mix properly to avoid formations of lumps of mixture..
  3. Add two drops of oil in the batter.
  4. In another bowl put some refined oil on its boundary
  5. In a cooker put a stand and pour only as much water so that the stand gets soked in it.
  6. Heat the water till it starts boiling.
  7. Now pour the batter in the bowl which was prepared with the refined oil
  8. Put this bowl in the cooker. Cover the cooker with the lid after removing the gasket for 20 min.
  9. Remove the bowl from the cooker and take out the dhokla on a plate. Garnish with the tadka and corainder.
    • For Tadka:

    • In a pan pour two table spoons of oil.
    • Add rye and curry leaves. Later when these start popping add water, sugar and salt to it.
    • When the sugar is mixed remove the pan from the gas and add lime juice to it.
    • Garnish the dhokla with the tadka and coriander.
    • Cut into small pieces and serve chilled..
