Sabudana, also known as tapioca pearls, is a staple food for the people in India who are on fast. During the fasts of navaratri, mahashivratri, janmashtami sabudana khichdi, sabudana kheer, sabudana papad and sabudana rolls are very popular. Also sabudana kheer, sabudana payasam are given to the sick as it is easy to digest and rich source of energy. Sabudana is mainly carbohydrate rich diet, low in fats, but also low in proteins and minerals and vitamins. Sabudana is loved by almost everyone fasting or non-fasting. Sabudana rolls are very rich to be served as evening snack or in breakfast. Below is the recipe to prepare the same.
Ingredients:
sabudana soaked for over 3 hours, Boiled potatoes, red chilli powder, jeera, salt to taste, green chilli, coriander, oil to fry the sabudana dumplings.
Steps:
1. Grate potatoes and mix sabudana and spices together properly.

2. Prepare small dumplings of different shapes using the mixture. Please note, put some drops of oil on your palms to make rolls of sabudana mixture else it will stick to your palm and will be quite rough.

3. Now fry these dumplings in the oil above 100 deg. in a wok.

Note here that if you touch the dumplings too many times with the ladle, they woud break.. Softly turn them over once after 5 min. And when they are fried properly, serve them hot with mango chutney or tomato sauce..

You may add onion and spices to your taste.
